Mother’s Day is drawing near, and if you are anything like me – a mom with small children – it can be hard to really relax and enjoy “your” day.
I remember well a Mother’s Day nightmare that left me in tears when my little ones were still babies. My husband was at work; my oldest daughter had opted to spend the day with another family. My son, then 2, woke up from his nap screaming and had a nasty fever. The baby woke up screaming from her nap with an explosive diaper all over her crib and all over her. I was in tears trying to handle cleaning them up and calming them down, and on “my” day no less.
Those days are a normal part of mom-life, as I’m sure you can relate. Fortunately, not every day is like that, and neither is every Mother’s Day. My kids are at an age now that we can enjoy meal prepping together. They love to get in the kitchen and help make meals and goodies. Mother’s Day is the perfect opportunity to get in the kitchen together, and let them make you something.
This recipe for lemon poppy seed loaf is very easy to put together, and the kids can get involved with adding the ingredients and helping with the mixing. Imagine the smiles on their faces when they get to not only help make you a special treat, but you get to sit and relax while they happily serve you a slice with your favorite cup of tea or coffee!
Lemon Poppy Seed Loaf
yield: 2 large loaves or 4 mini loaves prep time: 10 min bake time: 45 min
- 18 oz box lemon cake mix
- 3.4 oz box instant lemon pudding mix
- 4 eggs
- 1 cup water
- 1/2 cup vegetable oil
- 1-2 tsp poppy seeds
- Preheat oven to 350.
- Lightly grease and flour two 8×4 loaf pans.
- Mix together cake mix, instant pudding, eggs, water and oil, blending well.
- Stir in poppy seeds.
- Pour into prepared pans
- Bake at 350 for 45 min.
- Cool in pans on wire racks 10 minutes; remove from pans to finish cooling.
