Have you ever wondered how you could simplify your morning schedule a little bit? I know I have. Feed the kids. Feed the pets. Start some laundry. Make sure everyone has lunches. Is homework in your backpacks, kids? What’s for dinner, do I need to thaw something? Where are my keys…?

You know the drill… And we all know that breakfast is the most important meal of the day… Right…? I don’t know about you, but I love an easy breakfast solution. There are too many other details to get right in the mornings to make breakfast complicated.

I discovered this recipe for an easy breakfast a few years back when my kids were smaller and I was in MOPS (Moms of Preschoolers). One of the beautiful things about MOPS was that we all took turns bringing breakfast dishes to feed the rest of the lovely, busy, tired mamas. We needed – and cherished – a hot, healthy meal and a moment to breathe in the chaos of life.

Eggs. Sausage. Cheese. A few veggies for flavor, color and nutrients. What’s not to love? And so easy to throw together!

Easy Prep, Easy Cleanup

Over the past few years, the MOPS casserole morphed into these Mini Quiche Muffins. They are a breeze to whip up on a Sunday afternoon, and then you are set on breakfast for the week for you and the family. Grab one or two, pop ’em in the microwave and you’re good to go!


For us, it has made sense to use reusable muffin liners. The colors are super cute, and add a splash of cheerfulness to your morning. Pop out your muffin, and throw the liner in the dishwasher to clean for the next time. Done. So simple, goes perfectly with your easy breakfast.

Easy Breakfast - Mini Quiche Muffins
Instructions
  1. Preheat oven to 350 F. Line 12 cup muffin pan with reusable muffin liners.
  2. Cook sausage thoroughly, crumbling well. Add mushrooms, and cook an additional 2 min.
  3. Remove from heat. Stir in frozen broccoli.
  4. In a large bowl, whisk all eggs together combining well. Stir in sausage/veggie mixture and cheese.
  5. Distribute evenly among the muffin liners. (If there is more left over after filling the muffin liners, you can either grab a second muffin pan, or pour remaining mixture into a small, greased baking dish.)
  6. Bake at 350 for 30 minutes.
Recipe Notes

The beauty of this recipe is in its versatility. A variety of vegetables and cheeses may be used depending on your personal taste and preferences. I used broccoli and mushrooms here, because it was what I had on hand. I have also been successful using bell peppers or spinach instead. The same is true for the cheese variety. Here, I used a Mexican shredded blend because it was what I had on hand. Cheddar, Monterey Jack, and Swiss are also yummy options.
