4th of July Parties

In the land of the free and the home of the brave, the 4th of July inspires patriotism, bbqs, picnics, and you can’t forget the fireworks. Food is typically a huge part of the celebration of America’s independence from Britain. These tasty patriotic cupcakes will be a yummy treat on your dessert table.

This year, my own family is participating in our town’s 4th of July celebration parade, with our Cub Scout pack. The boys are excited to get to be a part of the party to get the day kicked off.

Fireworks and more

Some of my favorite memories of 4th celebrations are from events across this great country. There was the year we picnicked on the hill in Illinois cornfields. We enjoyed a delicious meal, a water fight that escalated quickly to ice and whipped cream, and capped the day off with a gorgeous fireworks display.

There was the year we grilled steaks, and headed off to a baseball game, America’s pastime. Great food, great game, great fireworks at the end of the evening.

Living in Southern California, we have access to some of the country’s most beautiful beaches. What could be better than a day at the beach, capped off by a bonfire to roast hotdogs and s’mores. If you go the the right beach, you can see fireworks displays all up and down the coastline, for miles in each direction. Absolutely gorgeous!

Patriotic Cupcakes

The things all of these memories have in common are cherished friends, an abundance of food, and capping off the evening with a beautiful fireworks display. I imagine that your memories and stories around your own July 4th celebrations are very similar as you spend time with friends and family.

Patriotic Cupcakes
Red velvet cupcakes, topped with a cream cheese frosting, garnished with a fresh blueberry. Wrapped in a navy blue cupcake liner, these patriotic cupcakes are sure to be a hit at your 4th of July celebration!

Instructions
  1. Preheat the oven to 350 degrees. Line 2 (12-cup) muffin pans with navy blue cupcake papers. (Or 2 (24-cup) mini-muffin pans work well too!)
  2. Combine flour, sugar, baking soda, salt, and cocoa powder in a medium mixing bowl.
  3. In a large bowl, gently beat together oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer.
  4. Add dry ingredients to wet and mix until smooth and thoroughly combined.
  5. Divide the batter evenly among the cupcake liners about 2/3 filled.
  6. Bake in oven for about 20 to 22 minutes.
  7. Test the cupcakes with a toothpick for doneness.
  8. Remove from oven and cool completely on wire racks before frosting.
  9. In a large mixing bowl, beat cream cheese, butter and vanilla together until smooth.
  10. Add powdered sugar, on low speed, beat until throughly combined.
  11. Increase the speed to high and mix until very light and fluffy.
  12. Garnish with a fresh blueberry.
Recipe Notes

Buttermilk substitution:

For each cup of buttermilk, use 1 tablespoon of white vinegar or lemon juice plus enough milk to measure 1 cup. Stir, then let stand for 5 minutes before adding to the recipe.
