Welcome Summer!

Summer is officially here, and for me, that means a change of pace. My mind slows down, the kids are out of school, and our attention focuses on all the joy and wonder of sunshine and outside activities. We are more intentional about spending time with friends at picnics and backyard bbqs. Easy side dishes and salads, like this Greek salad, are easy to prepare, and are a hit.

I don’t know about you, but I find that I tend to get a little lazier in the kitchen during the summer months. As the temperatures outside rise, who wants to be in the hot kitchen with the oven blazing? Certainly not me, and I imagine that you feel the same way. Keep it simple, easy living is the name of the game.

Greek Salad

I have always loved the taste of Greek salad, but I find that if I keep lettuce around, it always wilts faster than I can use it. That’s a huge waste of money. Enter this version of the Greek salad. It combines all the traditional Mediterranean flavors of cucumber, onion, oregano and olive oil, into an easy crowd-pleaser.

We had a family gathering recently, and made this Greek salad as a side dish. The bowl was all but licked clean by the end of the party. One person, a self-professed cucumber hater, enjoyed it immensely and came back for more. That is always a sign to me of a recipe worth keeping!

Instructions
  1. Dice cucumber, red onion and tomato. In a large bowl, combine all ingredients together thoroughly. Add salad dressing and mix well. For best results, allow to chill for at least two hours to allow the flavors to blend. Serve chilled.

You can easily make this a main course dish by adding chopped grilled chicken breast. Delicious!
