I’m Erica, the Pantry Fairy, making menu magic from my pantry in Lake Forest, CA.
I began my journey into the wonderful world of cooking at the age of 10, when I made my first batch of cookies from scratch. This sparked a love for recipes and cooking. I am also an avid reader, so began reading cookbooks at an early age. My standard go-to’s are The Joy of Cooking, The Betty Crocker Cookbook and anything by Gooseberry Patch.
I enjoy cooking and baking for my family, often creatively using whatever is on hand in the pantry and refrigerator. I’ve been known to stretch what looks like an empty pantry into another week’s worth of meals, even on occasion entertaining guests and whipping up delicious desserts on short notice.
I have a passion for cooking simply, combining basic ingredients into something that looks fancy, but is easy to do. My heart, and the reason I blog, is to help you to do the same – feed your loved ones simple, delicious home-cooked foods, even on a tight budget. It’s even more fun when you can get the kiddos involved! I’m asked frequently by friends for recipes and meal ideas. My hope is that you will find some useful tips here to make good use of your own pantry and become a “pantry fairy” too!
I’m a wife, mom of three, and follower of Jesus. When we aren’t in the kitchen cooking and eating, you can find us out exploring new parks and hanging out at Disneyland. I am the Assistant Tiger Den leader for my son’s Cub Scout Pack, and volunteer in my littlest’s AWANA Cubbies class.
